The Kitchen Manager oversees, coordinates, and supervises the restaurant’s kitchen staff in accordance with food safety standards. Responsibilities include hiring, training, and scheduling cooks; performing quality control on food leaving the kitchen; and ordering inventory to meet demand.

Job Summary
Oversees the day-to-day operations of the restaurant kitchen and the production and preparation of all foods. Ensures quality service and products while operating within the required budget (or better).
Responsibilities
- Works the "Window" position on the kitchen line during busy times.
- Oversees the preparation of all food products while following recipes and guidelines.
- Monitors ticket times and adjusts them as needed.
- Interacts daily with staff, including management and kitchen personnel, and keeps them informed of all pertinent information.
- Coordinates human resources functions with the General Manager as they pertain to kitchen employees, including but not limited to recruiting, interviewing, hiring, and terminating employees; overseeing employee files; ensuring all appropriate information is sent to the proper place; training employees; scheduling employees; conducting performance evaluations; and holding employee meetings.
- Reviews and audits functions, including, but not limited to, weight tests and the reconciliation of the food abstract.
- Oversees the upkeep, cleanliness, and organization of the restaurant kitchen, delivery areas, and waste receptacle areas. Keeps all equipment maintained and repaired as needed.
- Orders and receives food and dry goods, and verifies invoice accuracy.
- Conducts weekly and monthly inventories of food and maintains inventory at or below budgeted levels.
- Complies with the requirements of the Memphis and Shelby County Health Department. Administers in-house training and testing to kitchen employees on health department regulations.
- Prepares a kitchen schedule weekly. Adjusts labor to volume where applicable.
- Prepares daily prep sheets and monitors food par levels.
- Must be able to work 3-5 nights weekly.
Qualifications
- High school diploma or equivalent.
- A Certificate of “Serve Safe” or an equivalent safe food handling certificate is preferred for the BOH Manager.
- Three (3) or more years of experience in the restaurant industry as a manager is preferred.
- Work requires standing, walking, bending, lifting, stooping, or other physical exertion up to 80% of the time.
- Excellent interpersonal skills are essential for effectively working with diverse groups of employees, customers, and suppliers.
